I learned this recipe from my long time co-worker and friend, Richard Arocho. This cheesecake flan is super easy to make and sooo delicious!
Put all of the ingredients into a medium sized mixing bowl (soften the cream cheese in the microwave first if you're going to mix by hand)
Mix by hand or with an electric mixer
Spray four small baking ramekins with non-stick spray and pour a thin layer of caramel on the bottom of each (I used Smuckers caramel sauce, but you can use whatever brand you like)
Portion out the cheesecake flan mixture into the four ramekins
Place the ramekins into a larger baking pan and add water until water is about 1/4" deep.
Bake at 325 F for 25 minutes
Remove from oven, let cool, store covered in the refrigerator
